Rinse the Rice
Rinse the rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess surface starch and prevents clumping.

Combine Ingredients
Add rinsed rice, cold water, salt, and oil to the multicooker pot. Gently stir to ensure all rice is submerged.

Pressure Cook
Seal the lid and valve. Cook on High Pressure for 4 minutes.

Natural Release
Let pressure release naturally for 10 minutes (do not quick release). Open the lid and fluff immediately with a fork.

The Chemistry of Fluffy Rice: The 1:1 Ratio

In traditional stovetop cooking, water evaporates into the air, requiring a 1:1.5 or 1:2 ratio. Inside a sealed pressure cooker, there is zero evaporation. Therefore, you need a strict 1:1 ratio. The rice only absorbs the water it needs to gelatinize its starch structure.

Rinsing the rice is the most important step for grain separation. Rinsing strips away free amylose (a starch component) on the surface of the grains. If not rinsed, this starch dissolves and creates a gluey paste, resulting in clunky, sticky rice.
