Why You Can’t Just Use Almond Flour 1:1
When substituting regular all-purpose wheat flour, many people make the mistake of using 100% almond flour or 100% coconut flour. This is a disaster. Wheat flour provides structure through gluten (a stretchy protein). Almond flour has zero gluten and zero starch, meaning your cookies will crumble into dust and your cakes will be flat puddles. To substitute all-purpose flour effectively, you need a blend of different gluten-free flours and starches, plus a binder.
The Best DIY Gluten-Free 1:1 Blend
To perfectly mimic the starch and structure of wheat flour without buying an expensive pre-made blend (like Bob’s Red Mill 1:1), you must combine a heavy grain flour (for structure) with a light starch (for tenderness) and a binding agent (to replace the stretchy gluten).
To make 3 cups of perfect 1:1 gluten-free flour, whisk together:
- 2 cups of fine White Rice Flour (structure)
- 2/3 cup of Potato Starch (tenderness, do not use potato flour!)
- 1/3 cup of Tapioca Flour/Starch (chewiness)
- 1 teaspoon of Xanthan Gum (the crucial gluten replacement)
You can use this blend cup-for-cup in cookies, muffins, and cakes. It will not work for yeast breads, which require vastly different formulations.
Oat Flour (For Simple Recipes)
If you are making something very forgiving, like pancakes, waffles, or simple crumble toppings, you can use certified gluten-free oat flour as a 1:1 substitute for all-purpose flour. It provides excellent flavor and decent structure, though baked goods will be noticeably denser. You can easily make it by blending rolled oats until fine.
