Sauté Aromatics
Sauté the diced carrots and celery in a little olive oil for 3-4 minutes using the sauté setting.

Add Ingredients
Add the rinsed lentils, canned chopped tomatoes, and vegetable stock. Stir well to combine.

Pressure Cook
Lock the lid and seal the valve. Cook on High Pressure for 15 minutes.

Release and Serve
Let pressure release naturally for 10 minutes, then quick release. Season with salt, pepper, and serve.
No-Soak Lentil Cooking Under Pressure
Lentils are an excellent source of protein, but dry lentils typically require long cooking times on the stovetop. The high pressure inside the multicooker forces moisture deep into the starch and protein cells of the lentils, tenderizing them in just 15 minutes. Unlike beans, lentils do not contain high levels of lectins, making them safe to cook without soaking.
Using canned tomatoes adds acidity. It is best to stir tomatoes in but avoid letting them sit at the bottom of the pot, as the sugars in the juice can easily burn and trigger the burn sensor.
